I was recently asked to take part in the Vimto Bake Off challenge – an offer I definitely couldn’t turn down as I love baking and everything sweet – yes yes yes! I chose to bake Vimto ripple cupcakes with their jelly beans incorporated and as decoration; these jelly beans are brand new, suitable for vegetarians and come in three yummy flavours.
In a big purple box I was sent four packets of Vimto jelly beans, in the flavours original vimto, strawberry vimto and cherry vimto. Along with this was a big bottle of Vimto squash, a cute apron, memory stick and cake stands, all purple throughout.
Once set on my bake I got together the ingredients;
♥ 175g caster sugar
♥ 175g self raising flour
♥ 175g melted butter
♥ 3 eggs
♥ 1 tsp vanilla essence
♥ 1 tbsp vimto squash
♥ Vimto jelly beans
♥ Red food colouring
I preheated the oven to 170 degrees, and started mixing. First up, whisking together the eggs and sugar.
Next I alternated between folding in the flour and melted butter until fully combined.
I then poured half of the mixture into another bowl, adding vanilla essence to one half and vimto squash and red food colouring to the other. (I also added a pinch more flour to this to make it less liquidy.)
Next I poured the mixtures into my cupcake cases. I alternated about four times between the two to get a good layer of each, and then stuck a few jelly beans in each to get a pocket of flavour in each one. I then used a fork to swirl all the mixture around. I put these in the oven for around 17 minutes in the end and let them cool before icing.
For the icing!
I wanted to make a vimto ripple swirl for the icing also, but after running out of icing sugar the icing was just too thin – and to get pretty swirls it needs to be really stiff. Because of this I instead slathered it over the cupcakes and smoothed out, and then used a normal vanilla icing to pipe pretty swirls across the cakes.
After decorating with jelly beans I jumped straight in to trying them out and they taste soo good; if I do say so myself! 😉 Thank you Vimto!
